The unmistakable taste of an oil able to conquer even the kings.
On a clear day when the skies are blue, and such days are frequent here, take a walk to the old port of Alghero and see if you can sit down close to an old man whose face has been burnt by the sun while he once again ties and repairs the nets torn by the sea.
Stay there in total silence and do not ask him anything.
If you are lucky, the old seaman will break the long pauses of silence by telling the stories heard from other seamen when he was a child.
Centuries ago, King Charles V stopped by Alghero to pay a visit, like any good self-respecting king, to one of the oldest colonies of the northwest coast of Sardinia. It is said that before landing he stopped for a few moments to gaze at the olive groves which, from the hills of San Giuliano, picturesquely border the highest points of the Coral coast with heavenly shades of green and silver.
"How much good oil!" he said to himself. The same oil was later served to him by his subjects. He was so pleasantly surprised by this that Alghero became his second court.
This is the legend.
The true story is that time has not altered the practices, and the original treatment of the oil is preserved today in the pressed Bosana olives which can be recognized by their final distinct flavor, the unmistakable characteristic of cold-pressed extra virgin olive oils and organic oil.
