The Production Chain of Extra Virgin and Organic Olive Oil from Sardinia
From field to table, an exemplary cultivation and transformation process to offer an extra virgin olive oil of superior quality.

The consistent results achieved by San Giuliano over the years in Italy and abroad bear witness to the company’s continuous guaranteed commitment to the quality of raw materials, to their origin and to the reliability of the transformation processes from the very start of production.

The company supervises the whole production chain and boasts decades of experience in all stages of product harvesting and processing:

Olive harvestthe care of the olive groves, harvesting the fruit by hand and mechanically and processing it immediately, milling plants consisting of granite millstones and continuous cycle system processing plants built entirely from stainless steel, warehousing in AISI 916 insulated stainless steel silos that ensure constant temperatures all year round and the professionalism of the tasters in selecting the oils self produced or given to them by other olive growers.
Extraction plantThe olives are harvested both by hand and mechanically and milling begins immediately after sorting and washing using granite millstones.

The oil is produced in continuous cycle plants built entirely from stainless steel.

The oil produced is stored in various sizes of AISI 916 stainless steel silos, ranging from 10,000 to 100,000 litres.

The stored product is kept in a modified atmosphere to avoid exposure to oxidative processes that could cause the oil to lose its valuable chemical and physical characteristics.

Before packaging, the oil is decanted and filtered, and then with a system of internal pipes, transferred from the silos to the automated bottling plants.

From the time the empty bottle is filled to the creation of the packaging and the composition of the pallet, all activities are carried out by internal packing staff.

The packaged product is marketed immediately and does not remain in the warehouse for more than 3 or 4 days.
